The 7-ply set is different from our other sets in that it contains a carbon steel core between the stainless steel layers, and this is the only reason it is more expensive than the other sets. You do not need to buy this set unless you have an induction cook stoves. Induction cook stoves use a magnetic field to heat the cooking pan, which then heats the contents of the pan, while the cooktop itself stays relatively cool. You need a cooking utensil which will attract a magnet and has a flat bottom. Carbon steel in the construction makes this possible. A flat-top or ceramic top stove is not an induction cook stove.

The set is constructed of 7 plies, and comes with a total of 17 pieces which includes the lids and egg poaching cups.

Just like our other sets, the KT17ULTRA spreads the heat very quickly and very evenly. The steam control valve makes waterless cooking easy for you because it lets you know when to turn the temperature down.

Another important thing about waterless cookware is that waterless cooking is much healthier because it eliminates the need for grease or oil in cooking.
You'll also retain 98% of the vitamins and nutrients in your food as opposed to a 58% retention when boiling your food in water using regular cookware.

Stack Cooking The construction of the KT17ULTRA waterless cookware set will allow you to stack cook. You might cook a roast or chicken with potatoes and carrots in the stock pot on the bottom, a vegetable in the middle pan, and yet another vegetable in the top pan. When you're stack cooking with the KT17ULTRA set, remember to always start cooking each individual pan on a burner until you hear the steam valve whistle. After hearing the steam release valve whistle, you should close the valve and stack the pots to finish cooking. The heat is transferred from the bottom pan to the top.

Double Boiler Unit
The double boiler unit has a capsule bottom so that it can be placed directly on your stove-top as a cooking utensil when it is not being utilized as a Double Boiler Unit.

 7 ply set of waterless cookware is constructed of 304 surgical stainless steel and carbon steel, and is therefore heavier than materials used in other cookware. The total weight of the entire set is approximately 37 pounds.
Carbon steel is a metal manufactured from the elements iron and carbon, with the carbon imparting hardness and strength and determining the degree to which such physical properties exist.
Although this set of waterless cookware may be used on a variety of stoves, including gas, electric, and ceramic, it was originally constructed for use on induction top stoves. Induction top stoves generate heat magnetically directly into the cookware which transmits the heat to the food. With induction cooking the pan itself is heated, not the stove top. The cookware used on this type of cook-top needs to be magnetic and have an absolutely flat bottom.
