Tamping:
Tamping allows the hot water to penetrate the coffee grounds thoroughly and evenly before leaving the chamber. With improper or no tamping, the water makes a quick channel to its escape route, producing a watery cup. The goal of tamping is to create a compacted even pellet of coffee so that the not water in the machine will penetrate evenly.
Tampers:
Correct espresso tamping is essential, so is the use of a proper espresso tamper. A quality tamper should be firm, dense, of a good weight and comfortable in the users hand. Sizing, a tamper should be slightly smaller than the basket on the machine that you intend to use it for.
Most of the tampers I make are of the flat bottom variety, I think the crema production is more consistent from this type. If you prefer a concave or convex tamper, I will make custom pieces, listing them for you in a private EBay sales listing.
The tampers I make are one of a kinds made from various hardwoods, some laminated with a more dense wood with a decorative colorful wood handle. Mine are finished with a varnish that is food safe when dry and then buffed and waxed with carnauba wax.
Wood: Ebony - Diospyros spp. Ebony is a dense and heavy wood used for making musical instruments such as bagpipes, and violin pegs. Fine items such as chessmen, buttons, handles for cutlery, and stick shafts and handles are also made from Ebony. Ebony is one of the most difficult woods to carve due to its hardness. Traditionally only master carvers were given the opportunity. Ebony trees are fairly small, and are found in the tropical rainforests of Africa, India, Ceylon, Malaysia, and Indonesia. The bark and sapwood of ebony is tan to soft white and generally light in color. It is the inner portion of the tree that is dense, fine-grained, black, strong and heavy, and has been prized for centuries.
Ebony is known for its jet-black color and can vary from deep black to dark red, with a variety of rich dark shades. Heartwood may display dramatic and irregular striping of bright brown, gray or greenish black on a deep black background. Ebony is a scarce and very costly wood.
