**Greek yogurt is a heat loving yogurt that contains live cultures L. Bulgaricus and S. Thermophilus. This yogurt is different from the others offered in our store, which are cultured at room temperature. But like the others, Greek yogurt starter may be cultured time and again.
Greek yogurt culture does require heat. We have never owned a yogurt maker, so if you do not have one either, we provide in our instructions the method we use. All you need is a large stock pot, a heating pad, and some thick towels. :-) We have used this method with success for many years. You can also google other methods. We have heard of the oven/pilot light method, but do not have any experience with it.
Greek yogurt starter culture makes a slightly tart, rich and creamy, yogurt. To make thick Greek-style yogurt, add one part whipping cream to 3 parts whole milk, and culture for roughly four and a half hours. If Greek yogurt made with part cream is not decadent enough for your taste, make Greek yogurt with just heavy whipping cream for an incredibly thick, outstanding Creme Fraiche that can be slightly drained to make rich, creamy Mascarpone cheese. Alternately, Greek yogurt may be made with whole, skim or non-fat milk for a creamy, less rich yogurt. Traditional Greek-style yogurt is strained yogurt, yogurt that has been sieved three times. To make traditional Greek-style yogurt, strain yogurt through a fine sieve until yogurt stops dripping; then strain through a small sieve, then a medium sieve until the whey dries up. Strained Greek yogurt will have a little more tang and increased thickness with each straining. Serve Greek yogurt plain or with the addition of fruit or maple syrup.
By setting aside some of the yogurt from each batch of freshly made yogurt as your yogurt starter or seed to make your next batch of fresh yogurt, our yogurt starters will last you indefinitely. No need to periodically replace your yogurt starters in order to replenish your yogurt supply.
