Description
Asparagus is a perennial plant with erect, edible stems and tiny branches that bear even tinier flowers that become red berries that contain the black Asparagus seed. Formerly in the Liliaceae family, botanists have realized that Asparagus is in a class by itself and have repositioned its 120 species in the Asparagaceae genus. Asparagus is a high-end gourmet food item, but if you know how to grow asparagus, it becomes an inexpensive way to add a delicate flavor to your meals.

How to grow
Seedlings are produced in greenhouses and are usually transplanted into permanent commercial fields when they are about 10 to 14 weeks old.
Transplanting may take place either in the spring (early May) or in the fall (early to mid-September).
Choose a site where your plants won't be disturbed - and where you and they can happily coexist for 10 to 15 years.
For best results, irrigation should be applied if rainfall is insufficient to maintain adequate soil moisture. Seedlings should be thoroughly hardened off before field planting.
Place the plants in a moderately shady location and keep them moist. After about three days, transplant them to the field. In many cases, the asparagus fern will totally yellow and die; this is normal.
Grow asparagus in partial or full sun (it performs best in full sun) in soil with a pH of 6.5 to 7.0, amended with plenty of organic matter that is rich in potassium and phosphorus.
Weed control is a challenge in the transplanting of asparagus. Cultivation will be necessary to fill in the furrows as the fern grows and as herbicides lose their residual activity.
