Kombucha tea is natures probiotic in a real sense that the tea contains numerous beneficial bacteria, acids and yeasts that aid our bodies on a great many levels. A probiotic is a live bacteria that helps populate the large intestine with friendly bacteria known as gut flora, which dissolve harmful micro-organisms. Kombucha tea provides the body with additional gluceronic acid which is what the liver produces to detoxify the body. The tea also gives you an energy boost, due to the range of B vitamins in the tea, particularly B1, B2, B6, and B12. These vitamins also help the body to process fats (the tea is a great addition to any weight-loss regimen) and proteins. There is also vitamin C which is a potent detoxifier, immune booster and enhancer of vitality. Many have found they can wean themselves off caffeine once they start incorporating kombucha tea into their morning routine. In addition Kombucha has a wide range of organic acids and enzymes. The health benefits of Kombucha tea may also aid the body to alleviate a wide spectrum of ailments and conditions; from the mildest indisposition to the most serious diseases. A cursory google search provides many many testimonies of those who have been healed of various illnesses, and attribute Kombucha tea to their recovery. Considering all of kombucha teas attributes, it really makes sense that everyone who is concerned about their health should include this tea in their daily regimen. The best thing about it is that it costs only pennies a day to make and enjoy!

Please be advised - your kombucha mushroom will come floating in the starter tea, in the double-bagged freezer bags. SO DO NOT DISCARD THE LIQUID. :-)
How we Make 1 Quart of Kombucha: ~IT'S EASY!~
(Kombucha tea is NOT an exact science. You can use different ratios of starter tea and sweet tea, more or less sugar. Experiment to your taste! )
1/3 c. sugar (using white sugar produces the most detoxifying tea) 2-3 tea bags (Plain Black or Green tea is best. Rooibus (red tea) also makes a very yummy k-tea. Avoid teas with oils or else you will grow mold. Read the label.)
1/2 c. starter tea (which is just already prepared kombucha tea)
1 quart filtered water kombucha mushroom
Boil a quart of water in a stainless steal pot - no aluminum. Boil for 10 minutes to
remove the chlorine if your filter does not remove it. Add 1/4 - 1/3 cup sugar and mix
until dissolved. NO metal utensils. Metal, even rings on hands should NEVER touch the
culture. We use a wooden spoon. Add tea bags, steep, and cool to room temp. Remove
bags. Place kombucha and starter tea (your culture will be floating in the starter tea) in
glass jar - plastic may leach into tea so only use glass. Pour the sweet tea you made into
the jar but leave about 1-2" room for tea to "breathe" while brewing. Cover with the coffee
filter or piece of paper towel and secure with rubber band (to keep fruit flies out). Place in
pantry or on counter (just not in direct sun) and do not disturb! Start tasting after 4-5 days
(you can use a straw) and let it brew until your preferred taste. The longer you brew, the
more acidic it gets. When you see bubbles at the top of the liquid, it should be just right,
nice and tart and sparkling. Ours takes about 5-7 days, although it can take up to 10. In the
warmer months it does not take as long. Some prefer even longer brewing times. Remove
the mushroom and the baby mushroom (new mushroom) which may have attached itself to the
first. Bottle or drink. Start all over again! Instructions on how to make a gallon size brew as
well as other tips are included in our instructions.
Experts recommend starting with 2-4 ounces per day. Listen to your body. Some people find this is enough, others drink several ounces per day. We drink it by the glassful. Kombucha tea is a diuretic so be sure and be drinking plenty of water as well, if you are consuming the tea on a regular basis.

We have been making kefir for many years and just LOVE this amazing probiotic. It is a powerhouse of beneficial bacteria that helps heal and maintain health. There is MUCH you can find on the internet about the health benefits of this cultured dairy drink. Also, for the lactose intolerance, here is your answer to being able to enjoy dairy once again in your diet. The beneficial yeast and friendly bacteria in the kefir consume most of the lactose (milk sugar) thereby creating a much easier dairy to digest, for those with sensitivity.
You can use soy milk as well as coconut milk for your kefir but they require some additional steps, which we do include in our instructions.
The grains multiply so you can increase your supply of kefir! If well taken care of, you will never have to purchase grains again. Ours are raised in fresh raw organic milk, straight from a local farm family, not a crowded dairy. These animals are well-loved. :-) Goat milk makes a creamier kefir; cow milk makes a thicker kefir. BOTH work GREAT!
*You can use any kind of milk, though. You do not have to use organic nor do you have to use whole milk.
We drink this sparkling thick beverage straight, or use it in baking, or in smoothies - YUM! Add a little vanilla and it helps make it less tart. (We now offer homemade ORGANIC Vanilla Extract in our store!) Kefir also makes wonderful smoothies! This is also a great way to get your kids to drink it. :-)

**Kefir is so easy to make! Just add milk to the glass jar, drop in the grains, and cover with the coffee filter and secure with rubber band. It needs air to breathe but you also want to keep fruit flies out. Sit jar on counter and depending on the taste you want (it gets more sparkling and tart over time), it's ready in 18-24 hours. IN THE COOLER MONTHS IT MAY TAKE LONGER, LIKE 2 DAYS. We wait until the whey starts to separate (you'll see) b/c we like ours strong. It is ok and even beneficial to mix it up while it is brewing. When ready, mix first and then strain in plastic colander or strainer over a bowl or just spoon the grains out to use next time. Store kefir in glass jar in fridge with a tight lid.
**Do not use metal strainer or utensils - this could harm the grains.
There you go! Use grains again immediately or store in some milk in an airtight container in fridge.
