Coconut Cake Recipe
 
For years, Aunt Pauline's coconut cake recipe was a secret... even to family members. She always brought it to family functions, and it has long been my father's all-time favorite cake. Aunt Pauline (my grandmother's sister-in-law) and her coconut cake were the stuff of family food legend. Now, Aunt Pauline has been gone for many years, but  I recently stumbled upon her famous recipe tucked into a local church cookbook, so I had to try it. Unlike other coconut cakes I've baked, this one doesn't call for your basic 1-2-3-4 cake recipe. I think that's one of the things that makes it different. The icing is different too. Not butter cream... not cream cheese.... but more like a soft divinity icing. The basic cake recipe is light and fluffy and not difficult to make. The icing is slightly more difficult but not intimidating! And this cake is as beautiful as it is tasty! I hope you enjoy it!
