Why Elm & Oyster mushrooms?  They are delicious and nutritious, and have also been noted for their medicinal value.  They are a source of B & D vitamins, antioxidants, protein, and essential amino acids.  The Oyster mushroom may be considered a medicinal mushroom due to the fact that it contains statins such as lovastatin which work to reduce cholesterol.^[1]

These mushrooms can be used in countless recipes, they are great in a stir fry, or sautéed with a little butter, garlic and onion and added to many dishes.  

Note: I use ONLY organic practices and all of the food and plants that I grow conform to the USDA certified organic standards even though I am a very small farm that is exempt from the certification process.  I plan to apply for the certified naturally grown program (program for small farms).
