Dear Friend, onlooker, bidder, or simply a curiosity seeker,
I know you have been thinking about making fresh pasta for your restaurant for a long, long time. But, evidently, the timing was not right in fact, you're still cooking that old and stale concoction coming from Italy. Time to revamp your operation, use home grown (possibly from North Dakota) American winter durum wheat, and some fresh eggs from the local coup or the local supermarket. I will train you in person if you want to make a trip to Texas (in which case, I will make you an expert in pasta making in less than 4 hours), or, I will do that on the phone and the results should be quite good either way. Call me anyway, I will tell you "the rest of the story."
