The secret to raising bread with sourdough is a freshly fed starter. Before baking, feed your starter and let it ferment 4-12 hours. Then it will be ready to go! My starter has a delightful flavor ranging from delightfully sutble to “knock your socks off” sour. The longer you let your dough ferment, the more sour your bread will taste. I've captured a unique combination of strains of California Central Coast yeast and lactobacillus that provide excellent rising and flavor qualities. You will never need to purchase sourdough again. In fact, you will be able to provide your friends and family with sourdough.

The well-established starter will give excellent baking results when fed every week or two. All it needs is pure water and flour. However, it can be frozen for extended periods, so you don't need to hire a sourdough babysitter when you go on vacation. The starter has been maintained with organic whole wheat flour freshly ground from hard white wheat berries and filtered water.

The picture illustrates two 1 pound round loaves of 1/3 whole wheat and 2/3 white flour sourdough bread. You may use white all-purpose, white bread flour, rye flour or whole wheat to bake beautiful sourdough loaves just like they do in San Francisco.

I have baked loaves of bread that would make you swoon! I prefer whole grain breads, but you will also have fantastic results with white flour. I use whole freshly ground flour from white wheat berries in my baking. King Arthur brand flour makes a whole white wheat flour that will serve you just as well.

You may bake round artisan loaves, long baguettes, or in regular bread pans. Sourdough may also be added to fresh homemade pasta for a wonderful flavor.

Activating your sourdough starter

The pack contains enough for two starts. Mix ½ cup flour, ½ cup lukewarm pure water, and about 1 tsp. starter powder in a glass 1-quart jar. Don’t tighten the lid. Keep it at warm room temperature—70-80o F is ideal, but cooler is just fine. On the second day add an additional 1/2 cup flour and 1/2 cup pure lukewarm water, stirring to mix. By 48 hours you should see bubbles and signs of life. It’s alive!  On the third day add 1 cup lukewarm water and 1 cup flour. Feeding your starter daily for about 5 days will help it reach full activity.  Some bakers recommend you double the starter with each fedding, in which case you will need to pour some off each day. (one cup starter + ¾ cup flour + ¾ cup water = 2 cups starter) You may choose to bake with it or discard it. At day five you may continue to keep your starter at room temperature feeding it daily or put it in the refrigerator and feed it at least once weekly. The secret to successful sourdough baking is FRESHLY FED STARTER !

I keep my starter fresh by baking at least weekly. You may not want to bake bread every week, but my waffle recipe is a fast and easy way to use the starter. My 6 year old grandson, Brad, has declared my waffles to be "the best in the world"! The light crisp waffles (even when made with whole wheat flour) are perfect right from the waffle iron--even without butter or syrup! Even if you never bake bread, the waffles are worth getting this starter.

Cyndie Grandma’s Best-in-the-World Waffles

Whisk liquid ingredients together:

• 1 cup of Cyndie's sourdough starter
• 1 egg
• 1 Tbsp. olive or canola oil

Stir together:

• ¼ cup whole wheat or all-purpose flour
• 1/3 cup oat bran (or wheat bran)
• 1 Tbsp. ground flax seed (optional)
• ½ tsp. baking powder
• ¼ tsp. baking soda
• ½ tsp. salt
• 1 Tbsp. sweetener of your choice (sugar, sucanant, brown sugar, honey, syrup, other)

Stir the dry ingredients into the liquid ingredients. Add up to ¼ cup milk or water if necessary for a pourable waffle batter consistency. Bake in a hot waffle iron sprayed with cooking spray (like PAM). I also use this recipe for pancakes; I just add less water because I like thicker pancakes.
(For best results remove your starter jar from the refrigerator the night before. Don't forget to feed your starter to replenish what you use--3/4 cup pure water and 3/4 cup flour to equal about 1 cup starter.)

Sourdough purist may want to eliminate the soda and baking powder and let the sourdough provide the levening. Mix the ingredients and let the batter rise for 1-2 hours. Pour it into the waffle iron without stirring. I've tried this and had good results; however, it is not a light as the soda and baking powder version.
