I buy these and add custom handles and sheaths to make outdoor knives. Work just as well in the kitchen. I also purchased 6 of these to use as steak knives. Just a little care and these things last forever, I own one that is over 60 years old and still sharp as a razor. You can't go wrong with old hickory, the companies history can vouch for that!

This knife appeared as I expected. It was fairly sharp but I honed it up a little. The first thing I cut up was something a pineapple. A pineapple is probably not what is intent of this knife, but it did Alice through it very easily. I was impressed! My only real complaint with the knife it that the handle is way too small. It's approx an inch shorter than other comparable pairing knives. So a longer and slightly thicker handle would make it my go to kitchen knife. But as it is, I find myself reaching for a knife that's easier to hold on my hand. Although the knife rusts and stains easily, I love the HC steel. The stains give it character and it holds its edge well and hones easily. As long as you don't mind a little preventive maintenance on a good kitchen tool, it's a great knife.

If you want great, durable kitchen cutlery that holds up then buy this brand. This pairing knife is as essential to the kitchen as a screwdriver in your toolbox. OKC and the Old HIckory have been doing this right for a long time. Every single blade holds its edge and continues to perform like you'd expect. I only wish more things were as well made as these knives.

This American made carbon steel knife is excellent for cutting steak, chicken, fruit and other assorted foods. It sharpens very easily and will hold an edge quite well. While 1095 carbon steel can potentially rust, I've never had a problem with that in all the time I've owned this knife. The blade will take on a patina however in case that bothers you. My only criticism is the handle could be a tiny bit (1/2")longer. IMO this knife is worth far more than the $8.35 it costs and is a good buy.

I own several Old Hickory kitchen knives. This knife compares favorably with the others. They are the work horses of my kitchen. They are not stainless, so the blade will discolor, but that's natural. Just don't let them float in your kitchen sink all night. Clean them with hot water and dry them thoroughly, then leave them on a dry counter over night to allow the wooden handle to dry completely. Great quality and so reasonable for American made products!
