WHAT IS A CAJUN MICROWAVE?
Leave it to the Cajun people to develop another fun, unique way to cook outdoors. That's how the Cajun Microwave came about. The Cajun Microwave is a wooden charcoal-heated box used for cooking meats outdoors. The one I build is made of thick, deck boards, but you can use any type of wood you would like,(cypress, oak, fir, etc). The inside of the box is lined with 29 gauge metal. The firebox is constructed of heavy gauge metals for years of trouble free use. It has two used horseshoes for the handles, (my signature touch). The hot charcoal and wood mix radiates heat down throughout the box and cooks the meat inside. Since you have the meat on the inside, and the fire on top, you can leave the food in it longer. This makes it more juicy, tender, and flavorful, without having the dangerous toxins you can get with cooking over a barbeque fire. As a plus, you won't have to take a chance of burning the food.
HOW DO YOU COOK IN IT?
First you season and marinate the meat (turkey, pork, beef, ribs, roast, chicken, or any other type of meat), overnight is best, put it in a pan with onions, carrots, potatoes, etc. Cover and put the pan in the microwave and build a fire with just charcoal at first, about 8 to 10 pounds. As the fire goes down, add pieces of wood. The cooker should stay about 300 deg. and will cook most meats in about 2 to 3 hours. Check it occasionally, every half hour is good. When the potatoes and carrots are done, take them out and set aside. When you check it, flip the meat over. Stir the coals maybe add some wood to it and go have a cold one.
WHAT CAN YOU COOK IN THE CAJUN MICROWAVE?
I've used mine to cook everthing from turkeys to roast to fish to briskets. This size will not cook a pig, It is mainly for weekend family cooking get togethers, the measurement are 20 by 28 by 28 tall. If you want to make one to cook a pig you will have to double the size and cost of materials. One thing about the Cajun Microwave oven is that people from all over will smell the wood burning and know you are cooking something good. Eventually, they will find their way to your house. Always prepare (lagniappe) a little extra just in case this happens. A warm fire is a nice gathering place, and people will stand around the fire and just stare at it for hours at a time, swapping hunting and fishing stories. Traditionally the Cajun Microwave is used at holiday time, Easter, Thanksgiving, SuperBowl, Wedding Suppers, but it can be used for any weekend get together. Throw in a little Cajun music and I guarantee, the food will always taste better. HAPPY EATING AND AS THE CAJUNS SAY, "Aaa! Eee!"
